Cornmeal Cookies

Servings: 4 servings
- Ingredients:
- 2 ¼ c. flour
- ¼ c. Edwards Mill Yellow Cornmeal
- ½ tsp. baking soda
- ¼ tsp. sea salt
- ½ c. unsalted butter
- 1 c. sugar
- 1 Tbsp. lemon zest
- ¼ c. vegetable oil
- 1 egg
- 2 Tbsp. vanilla
Instructions:
- Preheat oven to 350°F and line a cookie sheet with parchment paper.
- Cream the butter and sugar on high speed until smooth. Add lemon zest, vegetable oil, egg, and vanilla until combined.
- In a separate bowl, combine the flour, cornmeal, baking soda, and salt.
- Mix the dry ingredients into the wet ingredients and mix until combined.
- Roll into 1in. balls, then roll in sugar.
- Place 1in. apart on baking sheet and bake for 7-9 minutes
