Cornmeal Cookies

Cornmeal Cookies

Prep time: 20 minutes            Cook time: 10 minutes           Total time: 30 minutes

Servings: 4 servings

  • Ingredients:
  • 2 ¼ c. flour
  • ¼ c. Edwards Mill Yellow Cornmeal
  • ½ tsp. baking soda
  • ¼ tsp. sea salt
  • ½ c. unsalted butter
  • 1 c. sugar
  • 1 Tbsp. lemon zest
  • ¼ c. vegetable oil
  • 1 egg
  • 2 Tbsp. vanilla

Instructions:

  1. Preheat oven to 350°F and line a cookie sheet with parchment paper.
  2. Cream the butter and sugar on high speed until smooth. Add lemon zest, vegetable oil, egg, and vanilla until combined.
  3. In a separate bowl, combine the flour, cornmeal, baking soda, and salt.
  4. Mix the dry ingredients into the wet ingredients and mix until combined.
  5. Roll into 1in. balls, then roll in sugar. 
  6. Place 1in. apart on baking sheet and bake for 7-9 minutes
