Salmon with Peach Jalapeno Glaze

Prep time: 10 minutes            Rest time: 30 minutes             Cook time: 35 minutes
Total time: 1 hour 15 minutes

Servings: 6 Fillets

Ingredients:

  • 1 c. Student-Made Peach Pepper Jelly
  • 1 Tbsp. lime juice
  • salt and pepper to taste
  • Fresh Cilantro, chopped (Optional)
  • 1 Tbsp. olive oil
  • 6 salmon fillets (about 2 lbs)

Instructions:

  1. In a mixing bowl, mix student-made peach pepper jelly, lime juice, cilantro, olive oil, and salt and pepper. Set ½ c. aside.
  2. Place the salmon in a large zip-top bag along with the remaining sauce to marinate in the refrigerator for 30 minutes.
  3. Clean and lightly oil a grill, or lightly oil a sauté pan and heat the oil over medium heat.
  4. Grill salmon for 5-7 minutes on each side, cooking until fish is opaque and easily flaked with a fork.
  5. Brush the remaining sauce over the salmon and enjoy!
