Salmon with Peach Jalapeno Glaze

Servings: 6 Fillets
Ingredients:
- 1 c. Student-Made Peach Pepper Jelly
- 1 Tbsp. lime juice
- salt and pepper to taste
- Fresh Cilantro, chopped (Optional)
- 1 Tbsp. olive oil
- 6 salmon fillets (about 2 lbs)
Instructions:
- In a mixing bowl, mix student-made peach pepper jelly, lime juice, cilantro, olive oil, and salt and pepper. Set ½ c. aside.
- Place the salmon in a large zip-top bag along with the remaining sauce to marinate in the refrigerator for 30 minutes.
- Clean and lightly oil a grill, or lightly oil a sauté pan and heat the oil over medium heat.
- Grill salmon for 5-7 minutes on each side, cooking until fish is opaque and easily flaked with a fork.
- Brush the remaining sauce over the salmon and enjoy!
