Apple Butter Bread
Ingredients:
1 8-ounce jar of Student-Made Apple Butter
2 teaspoons cinnamon, ground
1/2 teaspoon cloves, ground
1/2 cup water
1/2 cup butter, softened
1 1/4 cups light brown sugar
(2) large eggs, room temperature
1 3/4 cups all-purpose flour, sifted
1 teaspoon baking soda
3/4 teaspoon salt
Directions:
- Preheat oven to 350 degrees and grease a 9-inch loaf pan or 3 to 4 mini loaf pans and set aside.
- In a medium bowl, sift together the flour, baking soda and salt and set aside.
- In a mixing bowl beat the butter and sugar together until smooth. Add the apple butter, cinnamon and cloves and beat till combined.
- Add the eggs one at a time and beat till combined then add the water and mix.
- Add the dry ingredients and mix on low speed until combined. Do not overmix. Pour into pre-greased loaf pan or mini loaf pans.
- Bake the 9-inch loaf pan for about 60-65 minutes and the mini loaf pans for about 30 minutes or until a toothpick inserted comes out clean.
- Let stand for 10-15 minutes to cool slightly before removing from the pan and serve with butter.
