Apple Butter Bread

Total Time: 1 hour 30 minutes
Servings: 16 slices, ½ in. thick
Ingredients:
- 1 ¾ c. all-purpose flour, sifted
- 1 tsp. baking soda
- ¾ tsp. salt
- ½ c. butter, softened
- 1 ¼ c. light brown sugar
- 1 8 oz. jar of Student-Made Apple Butter
- 2 tsp. cinnamon, ground
- ½ tsp. cloves, ground
- 2 large eggs, room temperature
- ½ c. water
Instructions:
- Preheat oven to 350°F and grease a 9 in. loaf pan or 3 to 4 mini loaf pans and set aside.
- In a medium bowl, sift together the flour, baking soda and salt and set aside.
- In a mixing bowl beat the butter and brown sugar together on medium speed until smooth. Add the student-made apple butter, cinnamon and cloves and beat until combined.
- Add the eggs one at a time, beating at medium-low speed until incorporated. Then add the water and mix until combined.
- Add the dry ingredients and mix at low speed until just combined. Be careful not to overmix the batter. Pour into pre-greased loaf pan or mini loaf pans.
- Bake the 9 in. loaf pan for about 60-70 minutes and the mini loaf pans for about 30 minutes or until a toothpick inserted in the center comes out clean.
- Let stand for 10-15 minutes to cool slightly before removing it from the pan. Slice and enjoy warm with butter.
