Gluten Free Cheddar Grits

Ingredients:
- 2 Tbsp. butter
- 2 Tbsp. shallots, chopped
- 2 Tbsp. garlic, minced
- 2 c. milk, divided
- 1 ¾ c. water
- 1 tsp. sea salt
- 1 c. Edwards Mill Yellow Grits
- ½ c. shredded cheddar cheese
- bacon crumbles, cooked
Instructions:
- In a skillet, melt the butter and sauté the shallots and garlic until translucent.
- In saucepot, bring 1 c. of milk, water, and salt to a boil. Add the Edwards Mill Yellow Grits. Bring back to a boil, then, reduce heat to a simmer. Cook covered for 15 minutes, stirring frequently.
- Stir in the remaining 1 c. of milk. Cook until the liquid has been absorbed and the grits are soft. Stir in the shredded cheddar cheese and top with the crumbled bacon. Serve immediately and enjoy.
