PB&J Thumbprint Cookies

Servings: 4 dozen cookies
Ingredients:
- 1 c. peanut butter
- ¼ c. shortening
- ½ c. sugar + extra for dusting
- ½ c. brown sugar (packed)
- ⅓ c. boiling water
- 1 tsp. vanilla
- 2 c. Edwards Mill Biscuit Mix
- 8 oz. of your favorite Student-Made Fruit Spread
Instructions:
- Heat oven to 400°F and lightly grease a baking sheet.
- Mix the peanut butter, shortening, sugars, water, and vanilla at medium speed until thoroughly combined.
- Blend in the biscuit mix on low speed until the dough comes together.
- Shape into 1in. balls, roll in the extra sugar, and place on a lightly greased baking sheet about 2in. apart.
- Press a thumbprint into each cookie and add about a tsp. of your choice of Student-Made Fruit Spread.
- Bake 8 to 10 minutes or until the cookies are golden brown. Remove from the oven and cool. Enjoy!
