PB&J Thumbprint Cookies
Peanut Butter and Jelly Thumbprint Cookies
Ingredients:
1 cup peanut butter
1/4 cup shortening
1/2 cup sugar
1/2 cup brown sugar (packed)
1/3 cup boiling water
1 teaspoon vanilla
2 cups Edwards Mill Biscuit Mix
Your choice of Student-Made Fruit Spreads
Heat oven to 400°. Mix thoroughly peanut butter, shortening, sugars, vanilla, and water. Blend in biscuit mix. Shape into 1 inch balls, roll in sugar, and place on a lightly greased baking sheet. Press a thumbprint into each cookie and add a dollop of your choice of fruit spreads. Bake 8 to 10 minutes.
Yield: about 4-1/2 dozen cookies
