Cornmeal Dipped Onion Rings

Servings: 8 servings
Ingredients:
- 2 lbs. Sweet Onions, sliced
- 2 Eggs
- 1 c. buttermilk
- 2 c. flour
- 1 c. Edwards Mill Yellow Cornmeal
- 1 ½ tsp. sea salt
- ½ tsp. black pepper
- oil for frying (or use air fryer)
Instructions:
- Cut onions to ½in. thick slices and set aside.
- Whisk eggs and buttermilk in a small bowl. In another bowl combine dry ingredients and stir.
- Dip the sliced onion rings into the flour mixture, then the egg mixture, then back in the flour mixture. Repeat this process for each onion ring.
- Fry in hot oil for 1-2 minutes on each side or until golden brown. Drain on a paper towel and enjoy with Student-Made Pepper Jelly or try our Peach Mustard Recipe.
