Scone Mix Biscotti

Total time: 1 hour 10 minutes
Servings: 20 cookies
Ingredients:
- 3 c. Edwards Mill scone mix
- 3 eggs
- ½ c. butter, melted
Instructions:
- Preheat oven to 350°F. Prepare a cookie sheet with parchment paper.
- Combine all ingredients in a bowl and mix until a stiff dough forms.
- Roll into a 2in. diameter log and place on the cookie sheet.
- Bake for 25-30 minutes or until firm to touch. Remove from oven, let cool for 15-20 minutes.
- Using a serrated knife, carefully slice at an angle into ½in. thick pieces. Lay the biscotti flat on the cookie sheet.
- Bake in the preheated oven for 7-10 more minutes or until firm and golden. Enjoy with our College of the Ozarks coffee, or herbal tea.
- To try a different flavor add chocolate chips, dried cranberries, or pumpkin pie spice.
