Raspberry Linzer Sugar Cookies

  1. In a large bowl, cream together butter and sugar on medium-high speed until smooth. Beat in eggs and vanilla. Reduce speed to medium-low and add flour, baking powder, salt.
  2. Cover and chill dough in the bowl for 1 hour or overnight to bake in the morning.
  3. Preheat the oven to 400°F. Grease a cookie sheet or line with parchment paper.
  4. Roll out dough on a floured surface to ¼ in. to ½ in. thick. Cut into any shape (for a result, as shown above, cut out a 'window' in every other cookie to create a sweet cookie sandwich)
  5. Place cookies 1in. apart on the greased cookie and bake 6 to 8 minutes or until lightly golden.
  6. Cool completely and add Student-Made Red Raspberry Fruit Spread and a dusting of powder sugar for a delicious dessert!
