Pepper Jelly Coleslaw

Pepper Jelly Coleslaw

Servings: 6 servings 

Ingredients:

  • 1 Jar Student-Made Pepper Jelly (also try our Peach or our Dark Cherry Pepper Jelly for a slightly different flavor)
  • 1-2 Tbsp. warm water
  • 1 head of Red Cabbage, thinly sliced
  • 4 scallions, thinly sliced
  • 1 ½ c. shaved carrots
  • salt and pepper to taste 

Instructions:

  1. Chop Cabbage, Scallions, and Carrots. Combine all ingredients in a bowl.
  2. Pour Pepper Jelly into a large bowl and mix with 1 Tbsp. water to thin the jelly a little. If you like your coleslaw to be a little runnier, add more water. Add the cabbage, scallions, carrots, and salt and pepper to taste.
  3. Toss together and store in an air-tight container in the fridge.
