Blackberry Balsamic Vinaigrette Glaze

Ingredients
- 1 c Student Made Blackberry Fruit Spread
- 1 garlic clove, minced
- ¼ c balsamic vinegar
- 1 tsp fresh thyme
- 2 tsp Dijon
- 2 Tbsp minced white onion
- ½ c olive oil
- Sea salt/pepper, to taste
Method
- In small saucepan, heat oil. Add minced onion and minced garlic. Cook 45 seconds.
- Add Student Made Blackberry Fruit Spread and balsamic vinegar. Cook for 1 minute, stirring constantly.
- Transfer to a blender. Blend until smooth.
- Add thyme and Dijon. Blend until smooth.
- Slowly add olive oil and blend until smooth. Season with salt and pepper.
- Keeps in the refrigerator up to 3 weeks.
