Blackberry Balsamic Vinaigrette Glaze

PREP:  10 minutes
SERVING:  3/4 cup


  • 1 c Student Made Blackberry Fruit Spread
  • 1 garlic clove, minced
  • ¼ c balsamic vinegar
  • 1 tsp fresh thyme
  • 2 tsp Dijon
  • 2 Tbsp minced white onion
  • ½ c olive oil
  • Sea salt/pepper, to taste


  1. In small saucepan, heat oil. Add minced onion and minced garlic.  Cook 45 seconds.
  2. Add Student Made Blackberry Fruit Spread and balsamic vinegar. Cook for 1 minute, stirring constantly.
  3. Transfer to a blender. Blend until smooth.
  4. Add thyme and Dijon. Blend until smooth.
  5. Slowly add olive oil and blend until smooth. Season with salt and pepper.
  6. Keeps in the refrigerator up to 3 weeks.


    O-M-G, this is the best, most tasty salad dressing I have ever had. College of the Ozarks rocks!
