Peach Barbecue Chicken Pizza

Ingredients:
- Your favorite pizza dough (Try our Cornmeal Pizza Crust)
- ½ lb. chicken, cooked and shredded
- 1 Tbsp. Olive Oil
- Salt and Pepper to taste
- 8 oz. fresh mozzarella, diced ½in. cubes
- 3 oz. Goat cheese, crumbled
- 1 medium Peach, peeled and thinly sliced
- ½ c. freshly grated Parmesan cheese
- 3 Tbsp. fresh Basil, chopped
- ¾ c. College of the Ozarks Classic Barbecue Sauce
- ¾ c. Student-Made Peach Fruit Spread
Instructions:
- Preheat oven to 450°F and prepare a pizza stone or sheet pan with a little oil or sprinkle of cornmeal to prevent sticking and spread the pizza dough out on the pan.
- Brush the pizza dough with Olive Oil and season with salt and pepper.
- Mix the Barbecue Sauce and the Peach fruits spread in a bowl until smooth. Spread a thin layer of the peach barbecue sauce on the crust.
- Evenly add the mozzarella and goat cheese, then the chicken and peaches. Lastly sprinkle with Parmesan cheese.
- Bake in the preheated oven for 15-20 minutes or until the top is golden brown. Top with fresh basil and serve, while hot. Enjoy!
