Pepper Jelly Cornmeal Thumbprint Cookies
4 oz. unsalted butter, softened
1/2 c. honey
2 eggs
1/2 tsp. vanilla extract
1 cup cornmeal (CofO Student Made)
1 1/2 c. whole wheat flour
1 tsp. sweet paprika
1 tsp. salt
1/2 tsp. ground nutmeg
1/8 tsp. cayenne pepper

Procedure:
Preheat oven to 325.
Beat butter and honey until well blended. Add eggs and vanilla. Mix well. Mix in the cornmeal. Whisk the flour, paprika, salt, nutmeg and
cayenne in a bowl and mix well. Beat into the butter mixture until the dough comes together. Scrape into a bowl and chill for 30 minutes.
Drop rounded tsp. of dough onto prepared baking sheets, about 1 inch apart. With your thumb make an indent deep into the cookie ball.
You may need to dip you finger in flour to keep dough from sticking to your finger. Fill with pepper jelly. Bake 15-20 minutes, until the
the bottoms of the cookies are light golden.
