Cinnamon Pancake Churros

Ingredients:
- 3 c. Edwards Mill Malted Pancake Mix
- 2 ¼ c. Milk
- 4 eggs
- ½ c. Unsalted Butter, Melted and divided
- ½ c. sugar
- 2 Tbsp. Cinnamon
Instructions:
- In a mixing bowl, combine the Pancake mix, milk, eggs, and ¼ c. of melted butter. Stir until just combined.
- Preheat the oven to 350°F and heat a skillet over medium high heat.
- Grease the skillet and cook the pancakes using about ½ c. of batter for each pancake. The pancakes should be thin. Set the pancakes aside.
- In another bowl, mix the sugar and cinnamon.
- Brush each side of the pancakes with the remaining butter and sprinkle with the cinnamon-sugar mixture.
- Fold each pancake in half, and then in half again to make a little triangle.
- Place the tips of each pancake into a muffin tin and bake it in the preheated oven for 13-15 minutes.
- Enjoy them hot with a little dallop of Student-Made Apple Butter, Student-Made Fruit Spread, or syrup.
