Cinnamon Pancake Churros

Cinnamon Pancake Churros

Instructions:

  1. In a mixing bowl, combine the Pancake mix, milk, eggs, and ¼ c. of melted butter. Stir until just combined.
  2. Preheat the oven to 350°F and heat a skillet over medium high heat.
  3. Grease the skillet and cook the pancakes using about ½ c. of batter for each pancake. The pancakes should be thin. Set the pancakes aside.
  4. In another bowl, mix the sugar and cinnamon.
  5. Brush each side of the pancakes with the remaining butter and sprinkle with the cinnamon-sugar mixture.
  6. Fold each pancake in half, and then in half again to make a little triangle.
  7. Place the tips of each pancake into a muffin tin and bake it in the preheated oven for 13-15 minutes.
  8. Enjoy them hot with a little dallop of Student-Made Apple Butter, Student-Made Fruit Spread, or syrup.
