Cherry Pizza Pie

Ingredients:
Pizza Crust:
- 2 ⅛ c. Edwards Mill Biscuit Mix
- ½ c. water
- ¼ c. all-purpose flour
Filling:
- 8 oz. Cream cheese
- ¼ c. sugar
- 1 egg
Cherry Topping:
- 1 jar Student-Made Cherry fruit spread
- 6 c. fresh or frozen cherries
- ½ c. water
- 2 Tbsp. lemon juice
- ⅔ c. sugar
- ¼ c. cornstarch
- 1 tsp. vanilla
Streusel Topping:
- ¼ c. flour
- 1 ½ Tbsp. sugar
- 1 Tbsp. brown sugar
- 2 Tbsp. unsalted butter, softened
- pin. sea salt
Instructions:
- For the crust, mix the Edwards Mill Biscuit Mix, ½ c. water, and ¼ c. all-purpose flour in a bowl. When combined, cover and let the dough rest for 30 minutes.
- For the filling, beat the cream cheese until smooth in a large bowl. Add ¼ c. sugar and egg, blending until smooth and creamy. Set aside.
- In a separate pot, combine all the ingredients for cherry topping, except the Student-Made fruit spread and vanilla, and cook until thickened. Remove from heat and stir in the Student-Made fruit spread and vanilla.
- Place all ingredients for the streusel topping in a small bowl and mix until it forms small pea-sized crumbs.
- Preheat oven to 400°F and grease a pizza pan with oil or nonstick cooking spray.
- Roll the dough out to fit pizza pan.
- Spread a layer of cream cheese mixture onto the pizza dough to reach ½ in. from the edge.
- Top with the cherry topping and sprinkle with streusel topping.
- Bake 25-35 minutes.
- Serve with flavored whipped cream or ice cream.
