Apple Butter Muffins

Apple Butter Muffins

Total time: 30 minutes

Servings: 24 muffins

Ingredients:

  • 1 c. unsalted butter, softened
  • 2 c. granulated sugar
  • 2 eggs
  • 2 c. (16 oz.) Student-Made Apple Butter
  • 2 tsp. baking soda
  • 1 tsp. sea salt
  • 4 c. flour

Instructions:

  1. Preheat oven to 350°F. Line or grease 24 muffin tins.
  2. Beat the butter and sugar with a mixer at high speed until it is smooth and creamy.
  3. Add the eggs and Student-Made Apple Butter. Mix at medium-low speed until fully combined.
  4. On low speed, mix in the baking soda, salt, and flour. Be careful not to overmix as that can make the muffins dense and tough.
  5. Scoop the batter into the prepared muffin tins about ⅔ full and bake for 13-15 minutes or until a toothpick inserted in the center comes out clean.
  6. Let them cool on a wire rack and enjoy!

I made these on Christmas Eve for my family…they were delicious with softened butter on the side. Everyone raved about them. Guess I’ll be making these more often than just for Christmas. Thank you for the recipe
