Cornmeal Cookies

Cornmeal Cookies


2 1/4 cup flour
1/4 cup fine cornmeal, Student-Made Yellow Cornmeal
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1/2 cup unsalted butter
1 cup sugar
1 Tablespoon lemon zest
1/4 cup vegetable oil
1 egg
2 Tablespoon vanilla


Preheat oven to 350 F
Cream butter and sugar
Add lemon zest, vegetable oil, egg, and vanilla until combined
Add dry ingredients
Mix until combined
Roll into 1 inch balls
Roll in sugar
Place 1 inch apart on baking sheet
Bake 7-9 minutes
