Chocolate Zucchini Cake



1-1/4 cups whole wheat flour

1 cup all-purpose flour

1/2 cup cocoa

2-1/2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cinnamon

3/4 cup margarine

2 cups sugar

3 eggs

2 teaspoons vanilla

1 tablespoon grated orange peel

2 cups grated zucchini

1/2 cup milk

1 cup chopped nuts


Combine flours, cocoa, baking powder, soda, salt and cinnamon. Set aside. Cream together the margarine and sugar. Add eggs, one at a time; beat well. Stir in vanilla, orange peel and zucchini. Alternately, stir in dry ingredients and milk, including nuts in last addition. Bake at 350° in 10-inch tube or bundt pan for 1 hour or until done, or in three 8-inch layer pans. Layers take about 30 minutes.

Yield: 1 (10-inch) cake
