Whole Wheat Buttermilk Biscuits


1 cup whole wheat flour

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup shortening

3/4 cup buttermilk

Combine first 5 ingredients, mixing well; cut in shortening with a pastry blender until mixture resembles coarse meal. Add buttermilk to dry ingredients, stirring until moistened. Turn dough out onto a lightly floured surface, and knead lightly 4 to 5 times.

Roll dough to 1/2 inch thickness; cut with a biscuit cutter. Place biscuits on a greased baking sheet. Bake at 450° for 10 minutes or until browned.

Yield: 1 dozen
